CHICKEN STEAKS/NUGGETS - FOOD ALLERGY FRIENDLY

What kid doesn't LOVE Chicken Nuggets? Mr 2 and Mr 3 tend to go through cycles of "I all of a sudden don't like it..."
Nights we have Chicken Nuggets are always a stress free meal because I KNOW there will be no objections at the dinner table.

The images I am sharing are for chicken steaks, which make a great base for a Chicken Schnitzel or Chicken Burger. The pricipals are the same for Nuggets, only you will cut the chicken breast into smaller pieces, not steaks.

INGREDIENTS
     Corn Flour
     Rice Milk
     Rice Crumbs
     Chicken Breast
Garlic Salt or Chicken Stock Powder (OPTIONAL)
Lard or Oil for deep Frying
     Salt and Pepper to taste

You will need to cut your Chicken breast up so it's thin/ or in Nugget size pieces.
You then simply dip each piece of Chicken CORN FLOUR to RICE MILK to RICE CRUMBS.
If you are using Garlic Salt or Chicken Stock powder, that needs to be added into your Rice Crumbs.

Once all the Chicken is coated pre heat your Lard to 180 Celsius*
We use Lard because Mr 2 diet is very restricted in fat because of his food allergies. His growing brain needs Fats - It just so happens Lard is a tasty option! You can also use Rice Bran Oil.

Cook the Chicken for 6 - 9 min Depending on thickness.
They will be golden brown when ready.

FREE from EGGS, WHEAT, DAIRY, SOY and ALL NUTS.
