SILENT SUGAR COOKIES



















Nap time at our house is the perfect time to get a few things done... But quietly!  Waking those little ones too early from their nap sentences me to an afternoon of over tired and grumpy kids.

That's why I love these "Silent Sugar Cookies" because I can make them without the use of noisy mixers or machines.

All you need is a bowl and wooden spoon (and ninja stealth skills to keep the noise down and the kids asleep until the cookies are done!).

These cookies are a dairy, egg, soy and nut free, soft brown sugar cookie that are perfect for adding bits of dried fruit or icing with sprinkles for a birthday party.  Best of all they are sooo easy!



















Makes approx 15 cookies (I often double the recipe though and get over 30)

Ingredients:

125g (1/2 cup)  Dairy Free spread (Nuttelex)
80g (1/3 cup)  Brown sugar
1 teaspoon  Vanilla essence
225g  Plain flour *for a GF option simply substitute wheat flour for your favourite GF flour mix
2 teaspoons Baking Powder

Optional Extras: 1 cup of saltanas


Preheat the oven to 170 degrees and line a couple of baking trays with baking paper.

Cream the Nuttalex, brown sugar and vanilla in a bowl with a wooden spoon.

Add the flour, baking powder and any extras you want to add. Combine with a wooden spoon to form a soft dough.

Roll into small balls on your trays and press down with either the back of a spoon for a smooth look or a fork for a textured finish.

Bake for 12-15 minutes or until lightly golden, remove from oven and place on a cooling rack.
