Chilli Garlic Oil is my new favourite cooking buddy - i use it in so many things from stir-frys to popcorn (Yes it gives popcorn THE best flavour!).
It is perfect for a warm subtle infusion of chilli and garlic into our meals and snacks!
Initally I was worried it would be too hot for my young boys but it really only adds warmth and flavour not the typical chilli "Burning mouth on fire" feeling, so everyone in the family seems to enjoy it!
I love it so much I am thinking a little gift jar for my friend - who recently gifted me some lemon curd - is the perfect way to repay the favour!
For my small jar - which takes nearly a cup of oil - I am doing the following:
Small sterilised jar
1 chilli
2 small cloves of garlic
Olive oil
Use a clean sharp knife to cut the ends off the chilli and the garlic. Peel the dry skin off the garlic and place them in the jar with the chillis.
Fill the jar almost to the top with olive oil, ensure that the garlic and chilli are completely covered, and screw on the lid.
Store in the fridge for about a week before using to allow the flavours to infuse into the oil.
Use in place of other cooking oils when you want the deliciously warm and subtle flavours infused into your cooking!
