^^^^ WHEAT FREE, DAIRY FREE, EGG FREE, PEANUT/TREE NUT FREE, SOY FREE Tuna and Mayo Sandwich...!!! Who would have thought?
When we first discovered the extent of Mr2 food allergies, it felt like all of a sudden every food was off limits, and sometimes it still does.
Slowly we have discovered that it's not all about "You can't have..." rather "You can have **** instead..." There are so many helpfull products and with some creativity you can make foods you love, like a Tuna and Mayo Sandwich and be free from your food allergies.
Mock Mayonnaise
INGREDIENTS
1 CAN White Beans (drained)
1/4 Cup Olive Oil
Salt and Pepper to taste
1 TBS White Vinegar
Squeeze of Lemon Juice
1 TBS Rice Malt Syrup
Using a food processor or stick blender you simply blend all the above ingredients until smooth, sometimes I will also add a TBS of water.
Now Egg and Soy Allergies don't mean No Mayonnaise!
