FRIED RICE - FOOD ALLERGY FRIENDLY

My household loves Rice, I love Rice, my time loves Rice and my bank account loves Rice.
Quick to cook, versatile, and so affordable!

Fried Rice and it's variations are endless, the recipe we cook up is pretty much a collection of the tasty things that no one in my household is allergic too, and behold! a Magnificent Fried Rice that keeps everyone's taste buds happy. 
This recipe is best used as a guide, you should embrace it and get creative, use whatever you like, or have! 
I must admit, you know it's getting close to shopping day when I'm cooking fried rice for the second time in a week, that's only because you can use what you have - the only part of fried rice you will have to follow is the addition of, yes, you guessed it - RICE. Every thing else is up for interpretation. 

This recipe is FREE from EGGS, SOY, ALL NUTS, DAIRY and WHEAT.

















INGREDIENTS
2 Carrots
1/2 A Capsicum 
1 - 2 CUPS Fresh Spinach
4 TBS Olive Oil
1 TBS Crushed Garlic
4 Rashers Shortcut Bacon
2 TBS Chicken Stock Powder (I Use THIS !!! )
4 CUPS Cooked Rice

This is the part where your going to go set your rice cooker to do it's thing, and cook you some soft fluffy rice. 

While that is happening... ...
     Grate Carrots
     Dice Capsicum and Bacon
     and shread Fresh Spinach
Remembering you can use whatever you like. Peas and Corn, Broccoli, Cauliflower... ... .. ... 

In a large Frying Pan or Wok put all your diced and chopped Veg and Bacon, along with the Olive Oil and Garlic. Fry it all until the carrot is soft.




When the Rice is ready it's only a matter of adding the Rice to the Wok/Frying Pan, along with the Stock and giving it a 'fry' and combine all the ingredients together.
